Vineyard and terroir
The fruit comes from the east-facing Ginestra vineyard in Monforte, in the province of Cuneo. The site lies at 410 m above sea level and has sandy clay and loamy soils with a high limestone content. Planted in 1978, the vineyard has a density of 5,500 vines per hectare.
Vinification
The grapes are normally harvested by hand in October at optimal ripeness. Fermentation takes place at a controlled temperature in stainless-steel tanks, with maceration for 5–10 days.
Ageing
The wine matures for 22–24 months in barriques, 90% of which are new, and in 50 hl barrels. It then rests in bottle for a further 6–8 months.
Label / history
First released in 1982, the wine was previously named “Ciabot Mentin Ginestra” after its vineyard of origin.
