Vineyard and terroir
The 3 ha vineyard lies in the Ginestra cru at 290–350 m, with eastern and southeastern exposures. Its predominantly loamy and sandy-clay soils have a high limestone content. The vines are 45–50 years old, most planted between 1965 and 1970, and yield an average of 5 tonnes per hectare.
Vinification
The grapes are harvested by hand in October and macerated on their skins for 20 days. The wine undergoes malolactic fermentation.
Ageing
The wine matures for 16 months in French oak barrels, of which 80% are new and 20% are one year old, followed by 16 months in bottle.
Tasting profile
Fragrant, with aromas of spice, tobacco, graphite, dark cherry, plum, blueberry, blackberry, mocha coffee and new leather.
Label / history
First produced in 1990, Pajana takes its name from an old road running along the top of the hill. This ancient pass once linked Monforte d'Alba and Serralunga and can still be followed on foot.
