Questo vino
Vineyard and terroir
The vineyard lies on marl soils at an altitude of 220 m. Planting density was increased several times to establish a specific weight for each bunch and a corresponding flavour profile in the grapes.
Grapes
The Sauvignon Blanc vines were brought from France and have been cultivated in Friuli for many years.
Vinification
The grapes are generally harvested by hand in mid-September, when freshness and structure are in balance. After careful selection and sorting, they are pressed slowly and gently, with dry ice cooling used to preserve their distinctive aromas. The juice settles overnight before controlled-temperature fermentation in stainless-steel tanks. Malolactic fermentation is prevented.
Ageing
The wine spends five months on its lees and is not aged in oak.
Tasting profile
Very fresh, with bright acidity.
Label / history
Dorigo was founded in 1966 through the purchase of two vineyards: Ronc di Juri in Buttrio and Montsclapade in Premariacco. Neither vineyard had previously been especially well known. The new owners combined their traditions and history with modern technology, investing in vineyard machinery, new fermentation barriques and reed mats for drying grapes.
