The grapes are harvested at full ripeness in mid-September. Traditional fermentation includes extended contact with the skins, followed by racking, gentle pressing and malolactic fermentation.

Label / history
Colomba Platino was created in 1959 from the inspiration of Topazia Alliata, daughter of Duca Enrico and the last Alliata-family heir to manage the winery. Nero d’Avola joined the historic Insolia-based identity of the range beginning with the late-2010s harvests. The contemporary line comprises an Insolia white, a Nero d’Avola red and a Frappato rosé. Their labels draw on Poliedrica, Arrigo Musti’s 2024 artwork displayed in the Casteldaccia cellars and dedicated to Topazia Alliata. The selected section depicts a Bacchante, representing her rebellious, nonconformist youth.
