Vineyard and terroir
The Ulmo vineyard is in the Ulmo area of Sambuca di Sicilia, amid the woods surrounding the winery and around Orange Lake. It lies at 200 m above sea level. Its soils vary from shallow to deep and contain abundant stones, limestone and plant-derived organic matter. Planting density is 3,800 vines per hectare.
Vinification
The grapes are harvested by hand, usually during the first half of September. After destemming and crushing, they ferment on the skins in steel vats for 14 days at a controlled temperature of 25 °C. During alcoholic fermentation, the must is stirred by hand twice daily. Gentle pressing is followed by malolactic fermentation in stainless-steel tanks.
Ageing
The wine matures in oak barrels for eight months.
Tasting profile
A soft, fruity expression.
Label / history
