Vineyard and terroir

Nerello Mascalese is grown on the terraces of Tenuta Vajasindi on the slopes of Mount Etna. The volcanic setting contributes freshness, delicate savoriness and mineral character.

Vinification

The bunches are destemmed and the grapes transferred to a fermentation vat. Alcoholic fermentation lasts approximately two weeks. After several days the skins are mixed through the fermenting wine to extract polyphenols and anthocyanins. Skin contact continues for at least five days after fermentation. Following the initial racking, malolactic fermentation occurs naturally in concrete tanks.

Ageing

At least one year, divided between concrete tanks and new and second-use oak barriques.

Technical data

The 2022 wine has 13.5% alcohol, total acidity of 6.4 g/L and pH 3.4. The available format is 75 cl.

Tasting profile

Pale, bright red. Red-berry aromas are joined by balsamic and mineral nuances, vanilla and spice. The palate is structured and elegant, with approachable freshness, a delicate saline note and mature, balanced tannins. The finish is persistent.

Serving and pairing

Pair with grilled or braised red meat, game, flavorful meat dishes, and medium-aged or mature cheeses. Served cool, it can also accompany savory fish dishes.

Vintage notes

The 2022 season followed a rainy winter with a dry spring. Vine development ran slightly ahead of the recent average. Summer began very warm and finished under more moderate temperatures. Grapes were hand-picked on 28 September and carried to the winery in crates on small carts and tractors.
