Eduardo Torres Acosta

Early life\nEduardo Torres Acosta was born on the island of Tenerife, where he spent his childhood helping his father tend the family's small vineyard. He later studied enology and viticulture in Italy.\n\n### Sicily and Etna\nIn 2012, he went to Sicily to work the harvest with Arianna Occhipinti, then spent four years as the enologist at Passopisciaro. During this time, he also managed to rent several small plots totaling 2 ha, planted with old vines on the northern slope of Mount Etna.

The vineyards lie on the northern slope of Mount Etna, at elevations between 600 and 800 meters above sea level. The soils are varied, formed mainly from volcanic ash and rich in stones.

The plots are planted with old vines. The approach in the vineyard is to intervene as little as possible.

In the cellar, the approach is to intervene as little as possible. Sulfur dioxide is used only when absolutely necessary, and bottling is timed according to the phases of the Moon.
