Vineyard and terroir
Enrico Fossi's vineyards are in Signa, several dozen kilometres west of central Florence. They cover 12 hectares at approximately 80 metres above sea level, on limestone soils with thin layers of chalk. The vines average 10 years of age, and the site has a warm microclimate.
Grapes
Vignavento is made exclusively from Sangiovese Grosso.
Vinification
Fermentation takes place in wooden barrels and stainless-steel tanks. The wine undergoes malolactic fermentation.
Ageing
The wine matures in oak barrels for approximately 20–24 months.
Label / history
The label bears the Latin phrase “Memento Audere Semper,” coined by the Italian writer and poet Gabriele D’Annunzio and meaning “Always take risks.” Fossi names his wines and creates an individual label for each, using sayings, quotations and aphorisms connected to their character and story. The winery produces 30,000–50,000 bottles annually, depending on the weather and each vineyard's harvest.
