Vineyard and terroir
The estate’s 12 hectares of vineyards lie near Signa, several dozen kilometres west of central Florence, at approximately 80 metres above sea level. The soils are limestone with thin layers of chalk, and the area has a warm microclimate. The vines are 10 years old on average.
Vinification
Fermentation takes place in wooden barrels and stainless-steel tanks, followed by malolactic fermentation.
Ageing
The wine matures in oak barrels for approximately 20–24 months.

Fruit-driven and beautifully balanced.
Label / history
The label carries the words “O Cesare, si ha quel che si da?”, translated as “Tell me, Caesar, should we have what we have made?” Enrico Fossi names his wines and creates an individual label for each, using sayings, quotations and aphorisms intended to reflect the wine’s history and character.
Fossi inherited a large estate in Signa from his family, who owned knitwear factories. After travelling widely and visiting leading wine estates, he began making wine on his own land, departing from the area’s established practices and working mainly with international grape varieties. Annual winery production ranges from 30,000 to 50,000 bottles, depending on the weather and each vineyard’s harvest.
