The rosato is made by the saignée method, drawing off fermenting must after approximately 24 hours of skin contact. Fermentation is spontaneous, without temperature control or added yeast.
Ageing
Approximately six months in stainless-steel vats.
Technical data
Vintage 2024. Alcohol: 12.5%. Total acidity: 5.40 g/L. Total dry extract: 30 g/L. Total sulfites: 108 mg/L. Production comprised 2,000 bottles of 750 ml.
Tasting profile
A fresh, easy-drinking interpretation of a Tuscan rural tradition in which fermenting must was drawn away from the skins to make a lighter wine for warm days, while also concentrating the principal red wine. Its vibrant acidity is central to the style.
Serving and pairing
Serve chilled but not very cold, preserving the wine’s lively acidity. Suggested with a lampredotto sandwich.
Label / history
The wine revisits the practical tradition of Tuscan farmers who separated must after a few hours of skin contact. The resulting rosato was intended as an everyday warm-weather wine, while the remaining red gained concentration before completing fermentation and ageing in wood.
