Vineyard and terroir
The vineyards lie at 450–500 metres above sea level on loose, gravelly soils. The Guyot-trained vines are 10–20 years old and yield 50 hl/ha.
Grapes
Chardonnay. Certified organic under IT BIO 013.
Vinification
The wine undergoes a slow fermentation in large wooden casks. Spontaneous fermentation is pursued where possible, and malolactic fermentation takes place in some cases.
Ageing
Maturation lasts nine months on the fine lees in large wooden casks.
Technical data
Alcohol: 13%. Residual sugar: 2.5 g/L. Acidity: 5.5 g/L.
Tasting profile
Straw yellow with bright greenish reflections. The nose is fresh, aromatic and saline, with a light suggestion of vanilla. Full and elegant on the palate, it has finely judged acidity and an enveloping, savoury finish.
Serving and pairing
Serve at 10–12 °C. Pair with fish, especially grilled pike-perch or hake, as well as molluscs, crustaceans, poultry and wok dishes. Ageing potential is 6–8 years.
