Vineyard and terroir
The vineyards lie at 230–450 metres above sea level, with south- and east-facing exposures and calcareous gravel soils. The Schiava vines are trained to both Guyot and pergola, range from 20 to 50 years old and yield 65 hl/ha. The wine is certified organic under IT BIO 013.

Traditional fermentation on the skins lasts 12 days.
Ageing
The wine is matured and stored in stainless-steel tanks for nine months.

Alcohol: 12.5%. Acidity: 4.5 g/L. Residual sugar: 2 g/L.
Tasting profile
Light ruby red. The fruit-led bouquet recalls wild berries and ripe cherries. The palate is full, with subtle acidity and pleasant tannins, finishing in a harmonious aftertaste.
Serving and pairing
Serve chilled at 13–15 °C. Pair with pizza, Mediterranean dishes, or a platter of speck and cheese. Ageing potential is 4–6 years.
Label / history
Lake Caldaro is both a geographical reference and a point of identity: many of the vineyards surround the lake, while the winery shares its name with the village of Caldaro. Wine produced from Schiava grown around the lake is consequently known as Kalterersee.
