Vineyard and terroir
The vineyards occupy east-facing hillsides at 500–600 metres above sea level. Their soils combine calcareous gravel and morainic material with porphyry deposits. The Guyot-trained vines are 10–30 years old and yield 60 hl/ha.
Grapes
Pinot Bianco. Certified organic under IT BIO 013.
Vinification
A portion of the grapes undergoes cold maceration. Fermentation is partly spontaneous.
Ageing
The wine matures for nine months in large wooden casks.
Technical data
Alcohol: 13.5%. Residual sugar: 2.5 g/L. Acidity: 6.3 g/L.
Tasting profile
Bright pale yellow with greenish highlights. Fine floral and mineral characters are joined by ripe apple and peach. The body is elegantly balanced, leading to a lively, fresh finish.
Serving and pairing
Serve at 10–12 °C. Pair with fresh, light summer dishes, asparagus or fish. Ageing potential is 6–8 years.
