Vineyard and terroir
The Sauvignon comes from higher hillside vineyards at 400–550 metres above sea level. The vines are trained to Guyot and are 10–20 years old, producing 55 hl/ha. Gravel-rich subsoil contains a high proportion of limestone. The wine is certified organic under IT BIO 013.

Vinification
The grapes undergo cold maceration, followed by partial spontaneous fermentation in large wooden barrels.
Ageing
Maturation continues for nine months in large wooden barrels.
Technical data
Alcohol: 13.5%. Acidity: 6.6 g/L. Residual sugar: 2 g/L.
Tasting profile
Light straw yellow. The clearly defined nose combines fresh elderflower with restrained redcurrant and paprika nuances. The palate is full-bodied and smooth, showing a fine, creamy texture, well-shaped structure and a long finish.
Serving and pairing
Serve at 10–12 °C. Pair with fennel and goat-cheese salad, asparagus preparations or fish dishes. Ageing potential is 6–8 years.
