Vineyard and terroir
The hillside vineyards lie at 400–500 m above sea level on gravelly, calcareous soils. The vines are trained using both Guyot and pergola systems, range from 5 to 30 years old and yield approximately 80 hl/ha.
Grapes
Sauvignon.
Vinification
The grapes receive particularly gentle handling to preserve their characteristic vegetal aromas. Fermentation takes place at low temperatures.
Ageing
The wine matures for four months in stainless-steel tanks.
Technical data
Alcohol: 13%. Residual sugar: 2.4 g/L. Acidity: 6.1 g/L. Ageing potential: 2–3 years.
Tasting profile
Bright straw yellow with greenish reflections. Elderberry and nettle define the aromatic profile. The palate is pleasantly fruity, supported by refreshing acidity.
Serving and pairing
Serve at 8–10 °C. Suitable as an aperitif and with asparagus dishes or spicy starters.
Label / history
Sauvignon Blanc arrived in Alto Adige together with Sémillon at the end of the 19th century. Sauvignon Blanc became established and is now an integral part of the region’s wine landscape, unlike Sémillon.
