Vineyard and terroir
The vines grow predominantly on elevated slopes at 450–600 m above sea level, rooted in loamy limestone-gravel soils. The vines are 5–15 years old and trained using Guyot and pergola systems. Yield is 80 hl/ha.
Vinification
Ripe, healthy grapes are pressed as whole bunches. After natural clarification of the must, fermentation proceeds at a controlled 16 °C. The wine matures for four months on its fine lees in stainless-steel tanks.
Technical data
The 2025 wine has 12.5% alcohol, 5.9 g/l acidity and 3 g/l residual sugar. Its ageing potential is 2–3 years.
Tasting profile
White Peak combines complexity and fruit with a crisp, clear character. It is aromatic, fruity and fresh. Its identity reflects the connection to the Corno Bianco, whose pale dolomite rock remains visually prominent throughout the seasons.
Serving and pairing
Serve at 8–10 °C. Suited to warm summer evenings on the terrace and spontaneous meals with friends.
