Vineyard and terroir
The fruit comes from the Cerretta vineyard, at 350–400 metres above sea level. The 50-year-old vines grow on clay-limestone soils.
Grapes
The wine is made from a selection of Nebbiolo grapes.
Vinification
The grapes are harvested by hand in mid-September and placed in crates to preserve their integrity. At the winery, they are destemmed and pressed, then fermented in upright stainless-steel tanks with 40–45 days of skin contact and several pump-overs each day. Malolactic fermentation follows.
Ageing
The wine matures in oak barrels for 18–24 months, followed by a further 12 months in bottle in the winery’s cellars.
