Vineyard and terroir
The fruit comes from the Lazzarito plot, at 320–360 m above sea level. Its soils are calcareous marl with high proportions of sand and iron, and the vines are 90 years old.
Grapes
The wine is made from selected grapes.
Vinification
The grapes are harvested by hand in mid-September at full ripeness, then destemmed and pressed at the winery. Fermentation takes place in vertical stainless-steel tanks, with 50–60 days of skin contact and several pump-overs each day. Malolactic fermentation follows.
Ageing
The wine matures for 36 months in 2,000-litre oak casks. After bottling, it receives further maturation in the winery’s cellars.
