Vinification
The grapes are harvested once ripe and fermented in stainless steel tanks at 30 °C for one month.
Ageing
The wine is aged in stages: half in 500-litre barrels and the other half in 30 hl botti, for 30 months. A further year of ageing in bottle follows.
