Vineyard and terroir
The Pecorino comes from vineyards around Ortona on Abruzzo’s Adriatic coast. The vines face west and south-west, grow in medium-textured calcareous-clay soils and are trained to the pergola system. Pecorino is comparatively rare, with about 300 hectares planted across Abruzzo and Le Marche.

Vinification
Crushing, destemming, pressing and rapid cooling to −1°C are completed within seconds under an inert atmosphere. The must then undergoes static clarification. Fermentation at 12°C is divided between stainless steel, accounting for 80% of the must, and 40 hL oak barrels for the remaining 20%.
Tasting profile
Straw yellow with greenish highlights. The bouquet combines white-fleshed fruit, particularly pear, with balsamic nuances associated with the oak component.
Serving and pairing
Serve at 10–12°C. Pair with lobster, cream of vegetable soup, smoked fish or roast chicken.
Label / history
The variety’s name is linked to the traditional observation that a Pecorino grape bunch resembles a sheep’s head.
