Vineyard and terroir
Selected Merlot grapes come from vineyards at the foot of the Maiella massif, whose summit approaches 3,000 metres. The production area is Ortona and Pollutri in Abruzzo. This mountain setting shapes the wine’s aromatic character and elegance.

Vinification
The grapes are picked by hand at night, a practice referenced by the name Calalenta. Immediately after harvest they are pressed and cooled within seconds to −1°C under an inert atmosphere. The free-run must ferments in stainless steel at 10°C for 20 days.
Ageing
The wine spends 30 days on its lees in stainless steel before gentle fining, filtration and bottling.
Tasting profile
A Provence-style rosé with a very pale blush-pink colour. The nose combines fresh, flinty aromas of strawberry, freshly cut watermelon and rose petals. Mineral notes shape the palate, where refreshing acidity is integrated with the fruit. The texture is rounded, with good length and a long, intense finish.
Serving and pairing
Serve at 10–12°C. Suitable as an aperitif and with raw fish, delicate vegetarian dishes, fresh cheeses and Japanese cuisine.
