Vineyard and terroir
The component varieties are sourced from Abruzzo, Basilicata and Sicily.
Grapes
Pecorino, Fiano and Grillo. The grapes are picked manually into crates and carefully selected.
Vinification
Each variety is vinified separately to preserve its individual character. After gentle crushing, the fruit receives a 12-hour cold maceration and is then pressed. Pecorino ferments in large, unroasted 50 hL barrels, while Fiano and Grillo ferment in stainless steel at 10–12°C.
Tasting profile
A complex aromatic profile combines mango, papaya, lime and red grapefruit with lemongrass, lemon balm, mint and green tea. The palate is nuanced and persistent.
Serving and pairing
Serve at 8–10°C. Pair with appetizers—especially ham and cheese—delicate creams and soups, raw crustaceans and fish.
