Questo vino
Vineyard and terroir
The grapes come from some of the oldest vineyards in central Abruzzo. The vines average 20–30 years of age and are trained to the Pergola Abruzzese system.
Grapes
White grape varieties.
Vinification
The grapes are hand-picked at ripeness in the first week of September and carefully selected before crushing and destemming. A short cold maceration with the skins is followed by static clarification. The must ferments in stainless-steel tanks at 16–18°C.
Ageing
The base wine spends three months on its lees. Prise de mousse then takes place by the Charmat method in small stainless-steel pressure tanks.
Tasting profile
Brilliant straw yellow, with an elegant, persistent stream of bubbles. The complex nose combines green citrus and floral aromas. The palate is elegant, mineral and fresh, with balanced proportions.
Serving and pairing
Serve at 6–8°C. Suitable as an aperitif and versatile throughout a meal, with a particular affinity for seafood.
