Questo vino
Vineyard and terroir
The grapes are selected from north-facing vineyards in the province of Agrigento, Sicily. The local microclimate supports aromatic concentration while retaining crisp acidity.
Grapes
Pinot Grigio.
Vinification
The grapes are crushed and destemmed, lightly pressed and subjected to static settling. The clear must ferments at 12–14°C.
Ageing
After fermentation, the wine remains with its lees for approximately three to five months. It is subsequently racked and sulphited.
Tasting profile
Straw yellow with golden highlights. The complex aroma combines peach, grapefruit and lemon-lime with aromatic herbs, oak, vanilla and nutmeg. Medium-bodied and balanced, it closes with a persistent, clean aftertaste that is spicy yet delicate.
Serving and pairing
Serve at 10–12°C. Pair with rich first courses, white meats and cheeses; fish soup and roast fish are also recommended.
