Vineyard and terroir
The grapes are carefully selected and come from vineyards in San Pietro in Cariano. The soils are rich in volcanic rock, gravel and limestone.
Vinification
The grapes were harvested by hand in mid-September and sorted at the winery. They were dried in special units for 120 days, losing 40% of their original weight and becoming significantly more concentrated in sugar. In mid-January they were destemmed and pressed. The must underwent cold maceration, after which yeast was added and the temperature raised gently. Fermentation took place without temperature control, with regular pumping over. Before ageing, the wine was racked off the lees and clarified twice.
Ageing
70% of the wine was aged in Slavonian oak casks and 30% in barriques, for 24 months. After bottling it rested for a further period in the winery's cellars.
Vintage notes
In Veneto, the 2020 growing season began slightly earlier than usual, with no problems at flowering or fruit set. From March to July, moderate temperatures and an ideal amount of rainfall created favourable conditions. Temperatures rose in July and early August, followed by intense summer storms across the Valpolicella plains. Heavy rain and light hail caused occasional problems but no lasting damage. The grapes were healthy and of good quality, with normal sugar levels in line with previous years.
