Grapes
The grapes are selected before vinification.
Vinification
The grapes are harvested by hand in mid-September, then gently crushed and pressed. A short cold maceration on the skins is followed by clarification of the must and fermentation at a controlled temperature.
Ageing
The wine rests in stainless steel tanks to preserve its fruit aromas and freshness.
