Vineyard and terroir
The grapes grow on north-facing slopes in Passopisciaro, Solicchiata and Montelaguardia, at elevations of 650–800 metres. The three hectares are enclosed by a long wall, with 15- to 20-year-old vines growing alongside centuries-old olive trees and various fruit trees. The vines are traditionally cultivated in sandy, rocky soils with attention to local biodiversity. The area has a winemaking tradition of more than two thousand years.
Vinification
The grapes are harvested at optimal ripeness and ferment spontaneously in steel vats. The wine is made using low-intervention methods intended to preserve its natural aromatic profile.
Ageing
The wine matures for around 12 months in stainless-steel tanks and barriques, followed by a further 3–6 months in bottle in the winery’s cellars.

Delicate and elegant, with subtle aromas and a gentle smoky note associated with Etna’s volcanic terroir.
