Vineyard and terroir
The vineyards lie at 100 m a.s.l. on loose soil. Vines are trained to spurred cordon, planted at 6,000 plants per hectare and cropped at 55 q/ha.
Grapes
Chardonnay. Among the international white varieties grown in Sicily, it is presented here as particularly adaptable, retaining varietal definition and good acidity.
Vinification
Harvest takes place in mid-August. The wine is vinified in temperature-controlled steel tanks and undergoes malolactic fermentation.
Ageing
Maturation lasts eight months in barriques, of which 80% are new and 20% second-use, followed by eight months in bottle.
Tasting profile
Transparent straw yellow. The nose is full and fresh, with yellow-peach and pineapple notes. Freshness, an easy-drinking character and softness shape the palate. Its acidity supports further ageing.
Serving and pairing
Suitable for starters, seafood, white-meat dishes and substantial summer aperitifs.
