Vineyard and terroir
The vineyards are in Niscemi (CL), Sicily, at 100 m a.s.l. Loose soils are planted at 6,000 vines per hectare, with the vines trained to spurred cordon. The technical sheet gives a yield of 55 q/ha, while the wine page reports 60 q/ha.
Grapes
100% Grillo, a native Sicilian variety. One of four single-varietal Colori di Sicilia wines, it is made as a fresh, fruity and well-structured white with a full body, light savouriness and mineral character.
Vinification
The technical sheet places harvest around mid-September, whereas the wine page specifies the beginning of September. Vinification takes place in steel tanks at controlled temperature.
Ageing
Four months in steel followed by two months in bottle.

Sicilia DOC. Available in 750 ml bottles. First vintage: 2023.
Tasting profile
Straw yellow, varying in intensity. The technical sheet describes white peach, tropical fruit, honey and almond, joined by jasmine and flowering-meadow notes. The palate is rich, fresh and persistent. The wine page additionally describes greenish reflections, pineapple, orange blossom and a delicately citrusy, savoury palate.
Serving and pairing
Ideal with fish, molluscs and shellfish. It can also accompany mildly flavoured cured meats, white meats and selected East Asian dishes.
Label / history
Blue brushstrokes evoke the Sicilian sea. The design comes from ceramics by Giacomo Alessi, master of Caltagirone.
