Vineyard and terroir
The vineyards are in the province of Ragusa, Sicily, on sandy soils.
Grapes
Grillo is a traditional Sicilian white variety that has long been cultivated on the island and is also used to make Marsala.
Vinification
The grapes are harvested toward the end of August, when their aromas are most expressive. They are picked at night to preserve their acidity, then gently pressed for classic white-wine vinification. The resulting aromatic, elegant must ferments at a controlled 18 °C to produce the base wine.
Selected yeasts initiate a second fermentation in a pressurized tank at 13–14 °C for 8–10 days. Once the required pressure and residual sugar are reached, the wine is rapidly chilled to 2–3 °C, stopping fermentation and stabilizing tartaric acid. It is disgorged and bottled.

The stated award record includes gold medals at the Sakura Wine Awards in 2108 and the Berliner Wein Trophy in 2019; silver medals at the Berliner Wein Trophy in 2017 and Mundus Vini in 2018; and a bronze medal at the Japan Wine Challenge in 2019.
