Vineyard and terroir
The Pinot Grigio grows on sandy soils influenced by the sea, in the province of Ragusa. These conditions contribute to the wine's bright, fresh and aromatic style.
Vinification
The grapes are harvested at night in mid-August, which keeps them intact and preserves their quality. At the winery they are destemmed and gently pressed to give a clean must. The must is left to settle for a while, then fermented for several days at a steady 16 °C, which lets the grapes express their full aromatic potential.
Ageing
The wine rests on its lees for five months, which gives it a softer character.
Tasting profile
A light wine with a rich, inviting aroma that is lively and intriguing. Fresh and vibrant on the palate, and soft and easy to drink.
