Grapes
The blend combines the elegance of Cabernet Sauvignon with the bright fruit character of Nero d'Avola. Each variety is vinified separately.
Vinification
Nero d'Avola is harvested in mid-September and fermented for around two weeks with selected yeasts in stainless steel tanks. Cabernet Sauvignon is harvested in early October and fermented in the same way. For both, malolactic fermentation takes place in French oak barriques.
Ageing
After malolactic fermentation, the Nero d'Avola ages 8 months in French oak barriques and the Cabernet Sauvignon 12 months in French oak barriques. The two wines are then blended and aged a further 4 months in barrels to bring flavours and aromas into harmony. After bottling the wine rests another 8 months, so that the blend becomes fully balanced and integrated.
Tasting profile
Very full-bodied yet elegant, complex, refined and velvety, with notes of vanilla. The style is fairly classic, with a distinctly Italian twist.
