Vineyard and terroir
The grapes grow at 450 metres above sea level on a southeast-facing slope, which provides ideal conditions for ripening. The soils are volcanic and sandy.
Vinification
Harvest begins in the last ten days of October. The grapes are picked by hand into crates, with an initial selection in the vineyard followed by further sorting on a vibrating table. Fermentation takes place in stainless steel tanks at around 25 °C, with 12 days of skin contact.
Ageing
The wine spends 6 months in lightly toasted tonneaux, then moves to medium-toasted French barriques for another 6 months. After bottling it matures in the bottle for at least 10 months.

Label / history
"Aitho" comes from a Greek word meaning "to ignite, blaze or burn", a reference to both the wine and its volcanic origins. The lava shown on the label echoes the winery's logo.
