Vineyard and terroir
The Sagrantino grapes grow on steep, south-facing clay slopes cultivated according to biodynamic methods. The vines are treated only with copper, sulfur and biodynamic preparations intended to improve the soil’s humus; no chemical products are used.
Vinification
Harvest begins late, at the end of October. Fermentation lasts more than three months in terracotta amphorae, with natural yeasts and controlled temperature. The wine is then gently pressed in a horizontal membrane press. No sulfur is added during winemaking, and the wine is bottled without filtration.
Ageing
The wine ages for at least four years in large Slavonian oak barrels, followed by a further 12 months in bottle.
