Vineyard and terroir
The grapes grow on steep, south- and southwest-facing clay slopes. The vines are 40 years old and farmed biodynamically. Treatments are limited to copper, sulfur and biodynamic preparations intended to increase the soil’s humus; no chemical products are used.
Vinification
The grapes are harvested between mid-September and mid-October. Fermentation occurs with natural yeasts in open vats without temperature control, with only a minimal addition of sulfur. The cap is punched down three times daily using the traditional method.
Ageing
The wine spends at least three years in large Slavonian oak casks ranging from 5 to 70 years old. It clarifies naturally through racking before bottling, followed by a further six months of maturation.
