Vineyard and terroir
The vines grow on limestone and clay soils in the commune of Dogliani, at 500 metres above sea level. They are between 25 and 30 years old.
Vinification
The grapes are harvested by hand at optimal ripeness. Fermentation takes place in stainless steel vats and lasts 6 days.
Ageing
The wine ages for 7 months in concrete and stainless steel tanks, then for a further month in bottle after bottling.
