Vineyard and terroir
The Carricante is grown on Mount Etna in two places: Biancavilla, on the southwestern slope, at 700–800 m above sea level, and Belpasso, on the southern slope of the volcano, at 600–700 m.
Vinification
The grapes are picked at optimal ripeness and pressed as whole bunches at low temperatures. After static clarification, fermentation takes place at a controlled 18–20 °C, partly in 10 hl oak barrels and partly in stainless steel tanks.
Ageing
The wine ages for 8 months in the same vessels used for fermentation, oak barrels of 10 hl and stainless steel tanks. It is then filtered and bottled.
Label / history
IDDA was first planned in 2015. It is a joint project of Alberto Graci, an Etna producer, and Angelo Gaja of Barbaresco in Piedmont. The dry red 2017 was released in 2019, and the dry white followed in 2020. The name comes from the Sicilian word for "she", an affectionate name locals use for Mount Etna.
