Vineyard and terroir
Negroamaro is grown in the Manduria countryside in the province of Taranto. The site is flat, with clay-and-limestone soil, and the vines are trained to Guyot.
Grapes
100% Negroamaro.
Vinification
The grapes are harvested manually into plastic cases, with careful selection of the bunches, then carried in refrigerated trucks. At the winery they pass over a sorting table before destemming and gentle crushing. A cold pre-fermentative skin maceration takes place in stainless steel, with approximately 12 hours of contact between must and skins. Fermentation follows in French oak barriques.
Ageing
After a short maturation in wood, the wine undergoes tirage. It remains on the lees for no less than 36 months before disgorgement, followed by approximately 12 months of bottle ageing before release.
