Vineyard and terroir
Fiano is sourced from flat vineyards in Salento with clay-and-limestone soil. The vines are trained to Guyot.
Grapes
100% Fiano.
Vinification
Harvest takes place manually at night between late August and early September. The bunches are carefully selected, placed in plastic cases and transported in a refrigerated truck. A second selection is made on the sorting table before destemming and gentle crushing. Pressing is protected from oxygen. The must is held at low temperature for 5–8 days, clarified through natural sedimentation and then fermented at controlled temperature.
Ageing
The wine matures on its fine lees for at least eight months, with one-third held in French oak tonneaux and two-thirds in stainless steel. Approximately six months of bottle ageing precede release.
Tasting profile
Pale straw yellow with green reflections when young. The nose is intense, refined and complex, with white-flower and fruit notes. The palate emphasizes freshness and savoury character. Pronounced acidity contributes structure and longevity.
Label / history
The name recalls Charles II of Anjou, king of Naples, who at the end of the thirteenth century reportedly brought sixteen thousand Fiano vine cuttings from Cava de’ Tirreni and planted them at his Manfredonia estate, initiating Fiano production in Puglia.
