Vineyard and terroir
The fruit comes from Gianni Tessari’s own vineyards in the areas of Sarego and Vicenza.
Grapes
The wine combines two varieties; two-thirds of the harvested grapes are processed immediately, while the remaining third is lightly dried before vinification.
Vinification
Two-thirds of the grapes are pressed and fermented for 20 days in temperature-controlled steel tanks. The remaining grapes are lightly dried and crushed, then added to the main portion. The assembled wine undergoes a second fermentation, which adds depth of flavour and richness to the bouquet.
Ageing
The wine matures in oak barrels for 12 months, softening its tannins and developing a more expressive texture.
Tasting profile
The aroma is vibrant and the bouquet rich. The palate is soft and generous, with depth of flavour, softened tannins and an expressive texture. The finish is refined.
Label / history
The name “Due” refers both to the use of two grape varieties and to the double-fermentation process.
