Vineyard and terroir
Selected fruit comes from gently sloping vineyards in Oltradige at 450–530 m. The sites face partly west and partly east. Their stony moraine soils contain volcanic porphyry, while the elevation contributes to the wine’s freshness and mineral character.
Grapes
100% Sauvignon Blanc. Sauvignon has been cultivated in Alto Adige for more than a century.
Vinification
The grapes are harvested by hand and carried in small containers to protect them from excessive pressure. Whole bunches are pressed gently, and the must is clarified through natural sedimentation. Alcoholic fermentation takes place in stainless-steel tanks under temperature control. Malolactic fermentation is prevented.
Ageing
Eight months on the fine lees, divided between stainless-steel tanks and small oak barrels.
Technical data
The 2023 vintage is Alto Adige DOC. Yield is 46 hl/ha, alcohol 14.0% vol., total acidity 6.78 g/L and residual sugar 0.9 g/L.
Tasting profile
An intense aromatic expression of nettle and elderflower leads to a palate marked by subtle smokiness and minerality.
Serving and pairing
Serve at 10–12 °C with fish, shellfish or white meat. Cellaring potential is eight years.
