Vineyard and terroir
The grapes come from south- and southeast-facing vineyards at an altitude of 150 metres. The volcanic soils support vines aged between 30 and 60 years, planted at a density of 3,500 vines per hectare.
Vinification
The grapes are harvested in October after they have begun to wither slightly on the vines. They are destemmed, gently pressed and fermented in oak barrels at 18 °C.
Ageing
The wine matures in oak barrels for 12 months.
