Vineyard and terroir
The fruit is grown in the municipality of Monteforte d'Alpone, at 150 metres above sea level. The vines are 30–60 years old and occupy volcanic soils with southern and southeastern exposures.
Vinification
The ripest grapes are selected and harvested in mid-September. They dry for one month before being gently pressed. Fermentation takes place at a controlled temperature of 18 °C.
Ageing
The wine is stabilised and matured in stainless-steel tanks.
