Sixteenth-century origins
Il Palagio's winegrowing history reaches back to the mid-1500s, when wine was already being produced on the property. Surviving sixteenth-century records describe Il Palagio as a 350-hectare agricultural estate among the rolling hills of Chianti Colli Fiorentini. The villa also dates from the sixteenth century.
Seventeenth to twentieth centuries
Between the seventeenth and twentieth centuries, the property passed among prominent Italian families. Its agricultural infrastructure and activities developed over this long period through the introduction of oil mills, grain stores and wine production. The estate was once a residence of Tuscan nobility.
Sting and Trudie Styler
Sting and Trudie Styler purchased Il Palagio in 1997 and began an extensive programme of restoration. They restored the villa, its guesthouses, vineyards and olive groves, while the wider farmland was cultivated for wine grapes, olives, fruit, vegetables and herbs. The estate became their family's summer home and a setting for family gatherings, anniversaries, private concerts and intimate parties.
The owners continued Il Palagio's historic winegrowing tradition by replanting 15 hectares of vineyards according to organic methods. The property now operates as an organic farm and vineyard as well as a private home, hospitality estate and events venue.
Estate-grown wine and diversification
The first vintage of Sister Moon Toscana IGT was produced in 2007 entirely from grapes grown in the estate vineyard. By that time, Il Palagio's output encompassed wine, honey, cherries, apricots, peaches and olive oil.
In 2021, Sting and Trudie opened a Farm Shop and Pizzeria on the estate. The new hospitality operation offered Il Palagio wines alongside food and spritzes made with local aperitifs. A dedicated tasting area in the Farm Shop subsequently provided a place to sample and purchase estate vintages.
In August 2024, the owners added La Taverna dei Lupi, a summer pop-up devoted to street food and live music. Set in the estate's hills overlooking the Tuscan countryside, it opened with performances by local and international artists.
Terroir
Il Palagio lies above Figline Valdarno in the rolling Tuscan countryside south of Florence. The historic estate is situated within the hills of Chianti Colli Fiorentini and is surrounded by vineyards, olive groves, cypress trees and oak woodland. The Apennines are visible in the distance.
The estate combines undulating agricultural land with hilltop architecture: the sixteenth-century villa stands on a Tuscan hill at the heart of the property, while cultivated fields and vineyards extend through the surrounding fertile countryside. A lake also forms part of the estate landscape.
Vinificazione
Il Palagio functions as an organic farm and vineyard. Sting and Trudie Styler replanted 15 hectares of vineyards using organic methods, continuing a local winegrowing history documented from the mid-sixteenth century. Vineyard work forms part of a diversified agricultural estate that also tends olive groves and grows fruit, vegetables and herbs.
The estate associates its produce with seasonal agricultural rhythms and relies on a dedicated team of growers, makers and artisans. Its wines are presented as organic, while the products offered through the Farm Shop are described as being made through sustainable, organic methods.
Il Palagio produces organic wines from its Tuscan estate. Filosofia

The philosophy extends beyond wine to a diversified estate model: grapes, olives, honey, fruit, vegetables, herbs and preserves are cultivated or made within the same agricultural setting. Seasonal ingredients grown on the property also feed directly into its hospitality programme. Organic methods, care for the restored landscape and continuity with a winegrowing tradition reaching back to the mid-1500s form the central themes of this approach.
