Vineyard and terroir
The estate comprises approximately 2.5 ha of vineyard, including 2 ha producing Brunello. The vineyard is divided among eight terraces on the Montalcino hillside, averaging about 350 m above sea level and facing north to north-east. Its mineral-rich soils originate from Pliocene marine deposits interspersed with rock strata formed approximately 30 million years ago. No fertilisers are used; spontaneous herbs are employed as cover crops, while vineyard treatments are based on copper salts and sulphur. The vines are trained to double spur-pruned cordon, planted at approximately 0.9 × 2.7 m or 3,300 vines per hectare, and average 40 years old.
Grapes
100% Sangiovese Grosso from estate cru grapes.
Vinification
Green pruning is repeated through the growing season to balance production and improve ventilation. Shortly before harvest, substandard bunches and individual berries are removed. The fruit is selected again during harvest and immediately before destemming and crushing. The must flows by gravity into small- to medium-sized traditional glass-lined concrete vats. Fermentation starts spontaneously with indigenous yeasts and proceeds slowly, at low temperature, for a naturally prolonged period. Following racking, the wine clarifies by natural settling.
No technical adjustments are employed. After the required approval, bottling is performed by gravity to avoid mechanical-pump stress.
Ageing
More than 48 months in first-quality oak casks of approximately 26 hL, followed by more than 30–36 months of maturation in bottle before release.
Technical data
Annual production is approximately 1,200–1,500 bottles. Across Rosso, Brunello and Riserva, total annual estate production is about 9,000 bottles.
Serving and pairing
Suitable for vegetarian and vegan diets.
Ageing potential
The wine can continue evolving in bottle for many years, progressively developing its natural expression of the estate soils, indigenous yeasts and Sangiovese Grosso.
