Vineyard and terroir
The estate comprises approximately 2.5 ha of vineyard, of which 2 ha produce Brunello. The vines occupy eight terraces on the Montalcino hillside, at an average altitude of about 350 m with north to north-east exposure. The mineral-rich soils derive from Pliocene marine deposits and contain rock strata formed approximately 30 million years ago. No fertilisers are used; vineyard management includes cover crops from spontaneous herbs and treatments based on copper salts and sulphur. The vines are trained to double spur-pruned cordon, planted at approximately 0.9 × 2.7 m or 3,300 vines per hectare, and average 40 years of age.
Grapes
100% Sangiovese Grosso from estate cru grapes.
Vinification
Several rounds of green pruning regulate crop balance and ventilation. Shortly before harvest, bunches that do not meet the required standard are removed and deficient individual berries are picked out. Selection continues during harvest and once more before destemming and crushing. The must flows by gravity into small- to medium-sized traditional glass-lined concrete vats. Fermentation is spontaneous, slow, naturally prolonged and conducted at low temperature using only indigenous yeasts. The wine clarifies after racking through natural settling.
No technical adjustments are employed. Bottling takes place by gravity after approval by the Consorzio del Brunello commission and the Siena Chamber of Commerce.
Ageing
More than 36 months in first-quality oak casks of approximately 26 hL, followed by more than 30–36 months of bottle maturation before release.
Technical data
Annual production is approximately 6,500–7,000 bottles. Across Rosso, Brunello and Riserva, total annual estate production is about 9,000 bottles.
Serving and pairing
Suitable for vegetarian and vegan diets.
Ageing potential
The wine continues to evolve in bottle for many years, developing its natural expression of the Montalcino territory, estate soils, indigenous yeasts and Sangiovese Grosso.
