Vineyard and terroir
The estate comprises approximately 2.5 ha of vineyard arranged across eight terraces on the Montalcino hillside. The vines lie at an average altitude of about 350 m and face north to north-east. The soils are rich in minerals of marine origin dating to the Pliocene, with layers of rock formed approximately 30 million years ago. No fertilisers are used; vineyard management includes cover crops from spontaneous herbs and treatments based on copper salts and sulphur. The vines are trained to double spur-pruned cordon, with average spacing of 0.9 × 2.7 m, approximately 3,300 plants per hectare, and an average age of 40 years.
Grapes
100% Sangiovese Grosso from estate cru grapes.
Vinification
Unripe or otherwise unsuitable bunches are removed shortly before harvest, while deficient individual berries are picked out by hand. Further selection takes place during harvest and again immediately before the grapes are destemmed and crushed. The must moves by gravity into small- to medium-sized traditional glass-lined concrete vats. Fermentation begins spontaneously with indigenous yeasts, proceeds slowly at low temperature, and is naturally prolonged. After racking, the wine clarifies through natural settling.
No technical adjustments are employed. The wines settle and clarify naturally. Bottling is performed by gravity to avoid the stress of mechanical pumps.
Ageing
Approximately 14 months in cask before bottling. The ageing cellar uses first-quality oak casks of approximately 26 hL; the broader cellar description specifies more than 12 months in wood for Rosso di Montalcino.
Technical data
Annual production is approximately 2,000–2,500 bottles. Across Rosso, Brunello and Riserva, total annual estate production is about 9,000 bottles.
