Vineyard and terroir
The Chardonnay comes from south- and east-facing vineyards at 350–450 m above sea level. The sites are very windy, with loamy, sandy and limestone-gravel soils, and the vines are 10–20 years old.
Vinification
The grapes are whole-bunch pressed and macerated for 10–18 hours at low temperatures. Fermentation proceeds slowly at a controlled temperature of approximately 18 °C.
Ageing
The wine rests on fine lees in large wooden barrels for five months before filtration and bottling.
