Vineyard and terroir
The Soll vineyard is situated at 500 m above sea level. Cool nights and steady fresh breezes create a marked temperature difference from the warm, sunny days, helping the grapes ripen and develop their aromas.
Vinification
Twenty per cent of the harvested grapes undergo slow fermentation at a controlled temperature of 18 °C.
Ageing
The wine matures on its fine lees in wooden barrels for about five months. It is then filtered and bottled in March.
