Vineyard and terroir

The vineyards occupy hills between the southern shore of Lake Trasimeno and Panicale, near the Umbria–Tuscany border. The lake moderates the local climate and extends the ripening season. Warm summers and cool nights encourage slow ripening; Cabernet Sauvignon reaches full phenolic maturity without aggressive tannins, while Sangiovese retains structural acidity and a clean flavour. The soils are clay and limestone.

The vines are trained using the cordone speronato system and planted at approximately 5,000 plants per hectare to control yields and concentrate flavour.

Vinification

The grapes are harvested by hand and macerated on their skins for around 20 days. Alcoholic fermentation takes place in stainless-steel tanks to preserve a clean fruit profile.

Ageing

The wine matures for 10 months in French oak barriques, which adds roundness and chocolate and balsamic notes while making the tannins silkier. It then rests in bottle for a further six months, allowing the flavours to integrate.

Tasting profile

Powerful and enveloping, with a firm tannin structure, structural acidity and a clean fruit profile. Ageing contributes roundness, silky tannins, and chocolate and balsamic notes.

Label / history

First produced in 2003 as an experimental blend of Sangiovese and Cabernet Sauvignon, Torami takes its name from a local place name associated with a particular plot near Lake Trasimeno, outside Panicale.

Ferruccio Lamborghini founded the estate in the 1960s after leaving the automotive business and returning to agriculture. La Fiorita covers about 100 hectares, including 32 hectares of vineyards. Patrizia Lamborghini, Ferruccio’s daughter, has managed the estate since the 1990s, and winemaker Riccardo Cotarella works with the winery.
